Drying is the process of reducing the moisture content, which is influenced by
temperature, humidity and the speed of drying air flow. Rotary Dryer is one type
of dryer that has various types of stirring fins. This study aims to determine the
contribution of temperature and time as well as the effect of straight and right
angled fins on the drying process of white pepper. The test was carried out using a
rotary dryer with straight and right angled fins, a drum rotation speed of 20 rpm
and drying air from a blower from a biomass furnace. The test material in the
form of wet white pepper weighing 2 kg with variations in process parameters at
temperatures of 45˚C -50˚C, 50˚C -55˚C, 55˚C -60˚C with a drying time of 60
minutes, 75 minutes and 90 minutes for each fin shape. . Measurement of drying
results is done by measuring the water content in pepper. The test results show
that the biggest contribution in the drying process is at the highest temperature
(55˚C -60˚C) and the longest drying time (90 minutes). The level of water content
produced by the drying temperature and time was the lowest, namely 12.45% with
straight fins and 11.85% with right angled fins. Right angled fins have a better
ability to reduce water content than straight fins by 0.6%.
